This YouTube video is a local news segment (in Portuguese) providing an inside view of a Jacaré (caiman) farm in the town of Cáceres in the northern region of the Pantanal. This shows the raising of the Jacaré from young - then shows how they're processed. The skins are used for leather - whereas the meat is processed for restaurants and export. This is a cooperative venture set up as a modern and sustainable alternative to harvesting animals in the wild.

Part 2 shows how Jacaré meat can be cooked and served. It is low fat, low calorie, and high-protein meat that can be pan-fried or used in traditional recipes and dishes.
