Pantanal Escapes

This is a variation of the African-inspired moqueca recipe famous in Brazil's Bahia region. This uses Pintado catfish which is common in the Pantanal. The key ingredient, aside from the pintado, is the Dendê oil. This provides a strong yellow colour and a subtle, almost nutty, flavour.
